Raw Pea Soup by Cherie Soria


YIELD: 1 1/4 CUPS (310 ML)
               1 SERVING

 

Peas  are a protein-rich, low-fat diet. You may use either cold or hot water, depending on whether you want cold or warm soup. My favorite is frozen peas, although it is not raw (they are blanched before they are frozen), they work well in this recipe if fresh peas are not available.

 

1 cup (250 ml) fresh or frozen peas                                                   
1/2 cup (120 ml) purified water
1/4 small orange, coarsely chopped
2 teaspoons (10 ml) light miso
1/4 teaspoon (1 ml) garlic powder
1/4 teaspoon (1 ml) onion powder
Pinch of salt
Pinch of freshly ground white pepper
1 teaspoon (5  ml) chopped fresh dill weed or mint
2 teaspoons (10 ml) sunflower seeds or finaly chopped tomato (optional)

 

1.  Combine the peas, water, orange, garlic powder, onion powder, salt and pepper in a blender and process untill smooth and creamy.
2.  Add the dill weed and pulse just until it is evenly incirporated.
3.  Garnish with the optional sunflower seeds and serve immediatly.

NUTRITION NOTE  A serving of this delicious, creamy soup has only 1 gram of fat, yet it provides 10 grams of protein, plus it has more then one-quarter of your day’s supply of beta-carotene, folate, niacin, thiamin, and vitamin K. It’s also good source of copper, iron, magnesium, and zinc.
